There is nothing better during the fall and winter months than a delicious autumn squash soup. My favorite squash soup of all time is probably Panera Bread’s Autumn Squash Soup Recipe. Thankfully I’ve mastered a recipe that tastes almost exactly like it and I can make this soup in less than an hour thanks to a few nifty kitchen tools from KitchenIQ.

If you’ve ever cut up a butternut squash before you know that if you don’t have a sharp knife, you’re doomed. They tend to be very difficult to cut so a very sharp knife is critical. The Better Zester
I didn’t think I needed a zester until I decided to try zesting cinnamon sticks for my soup recipe rather than using pre-ground cinnamon from the store. That was probably the best decision I ever made. No joke, you can totally get a high on happiness zesting cinnamon sticks. I literally looked over at my mom, who was also using a better zester to zest lemons for a different recipe, and told her that the next time I was in a bad mood to send me to the kitchen and tell me to zest cinnamon sticks. I can not even describe how amazingly intoxicating the smell of fresh cinnamon is. Especially this time of year as we are quickly approaching the Thanksgiving and Christmas season.
I was able to quickly zest half a cinnamon stick and produce the necessary amount of cinnamon needed for my Autumn Squash Soup Recipe.
This zester is so impressive, it has features I didn’t even think a zester needed until I saw it and went “Oh my goodness, that’s genius!”. It has v-shaped zester blades that are non stick coated for smooth, easy zesting. Perfect Autumn Squash Soup Recipe
- 1 medium-large butternut squash (or 20oz package of precut frozen)
- 1 medium sugar pumpkin (or 15oz can of pureed pumpkin)
- 1 cup of chicken broth
- 1 cup of apple cider (non mulled)
- 1/2 cup of heavy cream
- 1/2 cup of whole milk
- 2 tablespoons of honey
- 3/4 teaspoon of cinnamon
- 1/2 teaspoon of curry
- 2 teaspoons of Real Salt
- 1/4 teaspoons of ground black pepper
- Peel, seed and chop butternut squash and pumpkin
- Boil both in large pot of water until tender
- Drain and puree with NutriBullet or other blender till smooth
- Return content to large pot on medium heat
- Add all the remaining ingredients and mix well with whisk or spoon
- Turn down and simmer on low heat for 10-15 minutes
- Serve garnished with a sprig of parsley or fresh oregano, a dollop of yogurt, and/or roasted, salted pumpkin seeds.
