What busy, sleep-deprived parent wants to cook, especially during the dog days of summer? According to a recent survey, most of us spend about 30 minutes preparing dinner, but we’d like to spend even less. The best way to get out of the kitchen fast is to make a main dish that requires few ingredients. Here is a tasty recipes with three main components (not counting 1 tbsp. of oil and salt and pepper). The only thing easier would be ordering in!
Round out this Southwestern dinner with Spanish rice and fresh mango slices.

Preparation time: 5 minutes
Cooking time: 15 minutes
* Four 3/4-inch-thick boneless, skinless chicken breast halves, salted
* 1 1/2 cups store-bought black bean and white corn salsa (try Muir Glen)
* One 15-1/4-oz. can Mexican-style corn, drained and rinsed
Heat 1 tbsp. olive oil in a large nonstick skillet over medium heat. Add chicken and cook for 10 minutes or until no longer pink, turning once. Set aside.
Add salsa and corn to skillet. Cook 2 to 3 minutes or until hot. Spoon over chicken and serve over rice. Voila!
