There is nothing better than an ice cream sandwich on a hot summer day. So how can you make inventive, fun and delicious ice cream sandwich treats for your lactose intolerant child during summer break? We’ve got some tips below to help spice things up!
Millions of people suffer from lactose related problems, including myself, so luckily the people at Tofutti are here to help. Tofutti products are sold in more than 20,000 stores across the country. I almpst always find them in my local grocery stores like Stop & Shop and Shaws. This Friday head to your local grocery and pick up a few boxes of Tofutti Cuties and try out the tasty and fun recipes below! You can enjoy Tofutti products whether you are lactose intolerant or not! And I know you’re probably thinking, “OMG NOT TOFU!” but seriously, this stuff is GOOD!
My children have egg allergies and most ice cream sandwiches have egg in them, so we were happy to find that Tofutti Cuties do not have eggs in them!
Check out these three amazing, dairy-free recipes that you can incorporate into your ice cream day celebrations this year!
TOFUTTI HAPPY CUTIES
What You’ll Need:
Your Favorite Tofutti Cutie Flavor.
½ Pound your Favorite Dark chocolate or Coating.
½ Cup of rice crispes.
What You’ll Need to Do:
In a microwave safe bowl place you’re chocolate and heat for 30 second or until melted. Chocolate should be in the 75-85 F range for proper coating.
Added ½ cup of Rice crispes or crunches of your choice.
Cut cutie into 4 equal parts.
Dip cuties into coating using a fork or wooden skewer.
Place on parchment paper on a tray and refreeze for 20 minutes.
Eat and Enjoy!
BLUSHING TOFUTTI CUTIES
What You’ll Need:
1 package snack-sized Tofutti Cuties
½ cup raspberry syrup
What You’ll Need to Do:
Unwrap Cuties and coat with raspberry syrup. Place on parchment paper and refreeze for 20 minutes. Serve and enjoy.
CHOCOLATE-PEANUT BUTTER-BANANA-TOFUTTI CUTIE SHAKE
(makes 1 3/4 cups)
What You’ll Need:
1 Tofutti Cutie, broken into pieces (vanilla, chocolate, or cookies ‘n cream)
3/4 cup dairy-free milk (I like to use coconut, but soy or almond will work as well)
1 frozen banana, broken into chunks
2 tbsp cocoa powder (if you use a chocolate Tofuttie Cutie, reduce to 1 tbsp)
2 tbsp peanut butter
1 tbsp sweetener (I’d recommend agave nectar or maple syrup)
What You’ll Need to Do:
If using a high speed blender, you can throw everything in there and blend until smooth. If you’re blender’s got a little less power, no problem. First, blend together the banana and the milk. Once it’s nice and smooth, add in the rest of the ingredients and blend again.
