Recipe for Veggie Cheese Dip with RITZ Crackers from Walmart!

There are two things that almost every single kid is guaranteed to eat without a hassle – one is macaroni and cheese, two is RITZ crackers. It’s like a fail-safe for busy parents – the things you can fall back on when all else fails.
But what about their vegetables?! Getting kids to eat veggies can be a pain sometimes, but I’ve found you can mix just about anything with cheese and kids will eat it. The mild, delicious flavor of cheese appeals to almost every child. Hide some veggies in there, and you have a complete meal!
For the days when macaroni and cheese is the only thing they will eat, I hide riced cauliflower in it. The color blends in and they can hardly tell a difference in flavor.
For the days when they want crackers, I make this delicious Veggie Cheese Dip which has corn, tomatoes, peppers, and onions, all mixed in with cheese so the kids gobble it right up!
Veggie Cheese Dip
1 sleeve of RITZ Original Classic Crackers
1 11 oz. Can of SteamCrisp® Mexicorn®, drained (available at Walmart)
3-4 Tablespoons Mild Salsa
1/2 Cup Mayo
1/2 Cup Sour Cream
2 tsp Chopped Jalapeno (if your kids like a kick!)
1/4 Cup Chopped Yellow Onion
2 Cups Shredded Cheese (I like sharp cheddar but also works with fiesta blend)
1 tsp Cajun Seasoning (add more to your taste)
- Mix well in large bowl.
- Chill for a few hours before serving.
- Transfer dip to a bowl and serve with RITZ crackers!
